If you're not using King Arthur Flour's brand, grease the parchment with vegetable oil spray to make double-sure the bites won't stick. In 4-quart saucepan, heat 5 cups water and the baking soda to boiling. Prepare a baking sheet by spraying it with vegetable oil spray, or lining it with parchment paper. Cut into 3x1/2-inch strips with hands, roll each strip into rope about 5 inches long. Set the mixture aside to cool to lukewarm (or cooler). If you do have leftovers, then you can store them in an airtight container at room temperature for up to 5 days. Flour the dough and place it in a bag, and allow it to rest for 30 minutes. Ingredients 1 and 1/2 cups (360ml) warm water (lukewarm no need to take temperature but around 100F (38C) is great) 2 and 1/4 teaspoons (7g). Heat the milk and water to 105☏ (I microwave it for 45 seconds.) Stir in the yeast and allow it to proof for 5 minutes. Knead the dough, by hand or machine, for about 5 minutes, until it's soft, smooth, and quite slack. Place all of the dough ingredients into a bowl, and beat until well-combined. Remove from oven and brush with melted butter if desired.To make dough by hand, or with a mixer: Weigh your flour or measure it by gently spooning it into a cup, then sweeping off any excess.Place the baking sheet in the oven for 10-12 minutes until golden brown.Using a sharp knife or pizza cutter cut the dough into one inch pieces. Take one piece and roll it into a long rope shape about 15-20 inches long. ![]() Place the dough on a lightly floured surface and separate into 8 equal pieces. Dredge in the egg wash and place on the parchment lined baking sheet. First preheat your oven to 425 and line a baking sheet with parchment paper.Cook for 30-40 seconds and remove with a slotted spoon and let dry for a few minutes.Cover dough and let rest for 10 minutes, up to 1 hour. ![]() In batches, add 1/2 of the bites to the boiling water mixture. Transfer dough to a lightly floured surface and knead for 3 minutes or so.Using a bench scraper or a knife, cut the bites into 1-inch pieces.Roll each piece into a rope about 1-inch in diameter.Divide the dough into 6 equal pieces with a pizza cutter.Once the dough has doubled, punch dough down and roll out on a floured surface.Stir in the baking soda and bring to a boil. Add 8 cups of water to a large heavy bottomed stockpot or Dutch oven. Line a baking sheet with parchment paper and preheat oven to 450 degrees.Place in a warm area and allow the dough to double in size.Roll and shape each half into a log, about 10 inches long. Knead the dough three to four times, and slice in half using a sharp knife or pizza cutter. ![]()
